Roasted Zucchini, Onion and Tomato Parmesan

Chop medium zucchini and a half a sweet onion (very fine to ensure it roasts all the way through) and layer in an oven-safe dish.

Cut two large tomatoes into wedges and arrange on top. Drizzle liberally with olive oil.

Sprinkle with Italian seasoning.

Cover with parmesan cheese.

Bake at 375 degrees for 30 -45 minutes or until brown.
