Simple tomato and basil salad

Perfect for a spring or summer picnic – but also the thing I need sometimes in the dead of winter to remind me that the sun will shine again: check out this easy and fresh tomato and basil salad.

Base:

8 large tomatoes (chopped) – or a lot of smaller ones – whatever works for you

1 bunch basil 20- 30 leaves (chopped)

1/2 onion chopped

Dressing:

1/4 cup red wine vinegar

1/8 cup high-quality extra virgin olive oil (life is too short for bad olive oil – spoil yourself and buy yourself a really nice olive oil – trust me on this)

1 teaspoon lemon juice

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Pinch of salt to taste – the longer this sits the saltier it becomes so it’s better to undersalt to start and add more if you need it later

That’s it! Toss it all in a bowl. It’s the perfect confluence of fresh flavors.

Grab a nice crusty bread to sop up the dressing after – you’ll be glad you did.
